The Answer – The Altar

Gold mining boom gave birth to Adelong back in the mid 1850′s and Adelong’s first licensed hotel came alive – the Commercial Hotel est. 1864.  Times have changed since then and this once thriving hotel was rebuilt, bigger and better in the early 1920′s with it’s front bar fulfilling the requirements of thirsty locals through continued trade for over 125 yrs.

This all changed in 1978 when the hotel license was sold off to Sydney, several changes of ownership saw most of this building stripped of its’ fittings, and the front bar now stood as an empty shell.  Country NSW is re-known for its’ pub culture, long standing since the glory days of gold mining, and now a new industry had evolved over the past 25  years  with cool climate wines right here on our door step.  Cool Climate Vineyards had evolved.  Beaufort House regained its’ license  again in 2008 after 30 yrs laying dormant. The time had come. (more…)

Seek and Ye Shall Find

Here we were, working daily on the renovations, restorations and changes to bring this hotel back to life.  The dining area, once named ‘Granny’s Kitchen’, being transformed into the restaurant environment we imagined and our Coat of Arms Restaurant born.  Decor with 1800 & 1900′s antiques, our Suit of Armour within theme, menu’s, everything had to change.  This was the first step to show the public a shift and decisive transformation had initiated.  Opening hours went from a previous ‘Open by Appointment’ to set opening hours being  honored  and adhered to at all times.

All guest areas, hotel rooms, totally revamped to provide a consistent flowing theme throughout the property in alignment with the European old world feel we wished to create.  Themed rooms seemed to be a great idea which stemmed from both of our world travel’s, and this born over a nice bottle of wine whilst exchanging ideas, resulting with the room names at Beaufort House today. A Magical Piece of the Puzzle

Part of the creative process is finding all the puzzle pieces to neatly fit together for the big picture.  This may seem like a daunting task.  Where does one start? How does it come together?

The most wonderful and exciting stage of this journey is identifying every single opportunity that presents itself along the way.

Each day, we have a variety of doors open to us beckoning to be entered.  Some are ideas, others are comments made to make you reflect and define your project, and sometimes it can be a unique ‘once in a lifetime’ opportunity, such as the one we had presented. (more…)

The Grand Plan

Our dreams and visions have now brought us to this wonderful process of creating a plan.  This is the stage which encompasses in depth research, requires endless hours of work to ensure that each individual element is identified for a solid base.

Searching for the right location,( in our case it was to be in a mountainous region ), with rivers, a rich history, and most importantly, we wanted country Australia.  History was a key point within this structure, as our vision was to create a European old world hotel, as was once found, and as you still experience throughout Europe. Focus on what you want

An important part of visualising, is the ability to define where you are within this picture.   Does it define you? Does it extend ‘itself ‘ as you wish to extend ‘yourself’? Is everything within this vision exactly what you want to see?

Many years ago, a dear friend of mine asked me a very simple question: ‘What do you want?’.  It may sound like a very straight forward question, and until this time, it hadn’t occurred to me that we tend to identify and focus on what we don’t want.  (more…)

Dare to be different

Life has an amazing way of presenting so many opportunities and endless dreams on a continual basis.  Just because you have a ‘big dream’, doesn’t mean that your many smaller ones are left by the way side. Always start with your first step – your first dream.  It is simply a decision.

Throughout many years of travelling the world and  meeting fascinating people, I’ve enjoyed the exciting daily wonders  encountered. Living amongst an array of cultures, experiencing this wondrous world we are part of,  dreams are created on a daily basis.  Each one has value and adds to the grand picture we see.  It comprises of countless pieces, somewhat like a puzzle.

Each dream we live out in reality, creates a new exciting stage completing our picture puzzle.  When one ‘Dares to Dream’, one also challenges themselves continuously.  Choosing to follow a dream, you also step completely out of your comfort zone into an entirely new dimension.

Dare to be different!.  Place complete faith in yourself, your knowing, and be willing to risk the safety that society has taught you.  Embrace the dream. (more…)
